The majority of commercial veal products are produced from the male calves of dairy cattle breeds such as Holsteins rather than high quality meat breeds like Black Angus. And, even though many of the most objectionable confinement practices are being eliminated in veal production, most commercial veal is raised in a “feed lot” atmosphere on a grain and milk supplement diet rather than natural forage and mother’s milk.

Lucas Farms Black Angus calves are raised on open pasture entirely on mother’s milk, clear water from natural aquifers, and traditional local grasses and forage in a low stress environment. This results in a veal that is rose colored and intensely flavorful when compared to pallid commercially raised veal.
